Lentil-Rice Tostados

Serves 8
- 1 pound lentils
- 5 cups water
- 1 cup tomato sauce
- 1 cup chopped or stewed tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- ¼ cup chopped green pepper
- 3 to 4 tablespoons chili powder
- Salt to taste (optional)
- 2 cups cooked brown rice
- Shredded lettuce
- Chopped tomatoes
- Plain nonfat yogurt
Simmer the lentils in the water for 30 minutes. Add the tomato sauce, tomatoes, onion, garlic, green pepper, chili powder, and salt, and simmer for an additional 30 minutes, stirring frequently. Spoon the lentil mixture onto a platter of rice and layer with the remaining ingredients.
